At the estate of Lambrays (10 ha), the organic goes without saying. It is not uncommon to see horses in plowing. The tradition is that the harvest is vinified in "whole grape harvests", after an intransigent sorting and, of course, all the best practices that one can expect from an area of this rank, both in the vineyard and in the cellar. Recently acquired by the LVMH group, the estate will have the means of its ambitions: to remain among the largest black pinot in Burgundy.
Jacques Devauges is the new personality of the estate.
