Domaine Macle Côtes-du-Jura Chardonnay sous voile dry white 2014

I retasted the 2014 Côtes du Jura Chardonnay Sur Voile, which has developed further nuance and detail of the aromas usually associated with the biological aging under a veil of yeast. Even if it only matured sous voile for three and a half years, it has taken the classical nutty aromas quite strongly; it matured in a cold cellar, where the evolution of the wine is quite slow. The year produced fine wines that seem to go quite well with the natural power for the Chardonnay. Round, not heavy, tasty and salty. Drink 2019-2027.

The 2014 Côtes du Jura Chardonnay Sur Voile is a spicy and yeasty white with the Jura twang that aged in barrique under a veil of yeasts for two years, limiting the contact with the yeasts as they don't want too strong of a character of the veil in the wine. It had marked aromas and an electric palate with vibrant flavors and pungent acidity, which made it very long. It has the volume and power of Chardonnay, with more volume than a Savagnin, powerful and round, with a salty finish. 3,000 bottles produced. It was bottled in April 2017. Drink 2018-2028.
